Low Calorie Chocolate Mousse

This delicious, low-calorie dessert showcases the antioxidant properties of chocolate. This study carried out by the University of Florence (Italy) found that  dark chocolate is a functional food that can promote health. Of course, it should be clarified that, in this case, we modify its properties by mixing it with other ingredients.

Ingredients

  • 4 eggs
  • 3 tablespoons of stevia (45 g)
  • 2 and a half cups of dark chocolate (275 g)
  • 3 tablespoons of skimmed milk (50 ml)
  • 1/2 cup of natural vanilla extract (25 ml)

Preparation

  • Prepare a large bowl where you can melt the chocolate in a double boiler.
  • Once the chocolate has melted, add the skimmed milk, the stevia and mix everything well, making sure that the mixture is perfectly homogeneous.
  • Then break the eggs and separate the whites from the yolks. Then, beat only the yolks.
  • Add the beaten egg yolks to the chocolate mixture and beat everything perfectly until you obtain a smooth cream.
  • Then use the egg whites you left out and the vanilla extract. Incorporate these ingredients into your chocolate cream and beat everything well.
  • To finish, place this chocolate mousse in molds and keep them in the refrigerator for about 2 hours.

Low Calorie Dessert Recipes: Vanilla Ice Cream

Ice cream is generally high in fat and calories. However, there are some recipes that allow you to prepare them in a healthier and lower calorie way. In this case,  we use almond milk, and vanilla essence.

As a replacement for cow’s milk, almond milk contains healthy fats and important minerals. According to a publication in the  Journal of Agricultural and Food Chemistry,  carried out by Tufts University in the United States, almonds  provide monounsaturated fat, fiber, α-tocopherol, minerals such as magnesium and copper, as well as phytonutrients.

Ingredients

  • 6 egg yolks
  • 2 and a half cups of almond milk
  • 1 tablespoon of vanilla extract (30 ml)
  • 4 tablespoons of Stevia sweetener (75 g)

Preparation

  • Heat the almond milk with a spoonful of vanilla extract over low heat.
  • On the side, beat the egg yolks with the Stevia sweetener so as to obtain a completely homogeneous mixture.
  • To thicken this mixture and give it more flavor, add a little almond milk to the egg yolks.
  • Then, heat this mixture in a saucepan for 5 minutes over low heat.
  • Finally to finish, increase the heat a little and when the mixture comes to a boil, remove it from the heat and let it sit until it almost reaches room temperature.
  • If you have an ice cream maker, use it. Otherwise, place the mixture in the fridge and you will get the same delicious result.

Low Calorie Dessert Recipes: Bread Pudding

For the preparation of this low calorie pudding, you will also appreciate the ease of its preparation and the ingredients used. You will certainly end up preparing this recipe often!

Ingredients

  • 2 eggs
  • 7 slices of white bread (400 g)
  • 2 and a half cups of cottage cheese (250 g)
  • 1 cup of fig jam (110 ml)
  • 1 tablespoon of vanilla extract (30 ml)
  • 2 cups of oat milk (220 mL)
  • 1 grated red apple (75 g)
  • 1/2 cup of raisins (60 g)
  • 2 tablespoons of Stevia (50 g)

Preparation

  • Start with the bread first. Make sure to crumble the bread into small pieces. Then soak it in oat milk.
  • In another step, you will have to mix all the other ingredients of this recipe together. Finally, add these ingredients mixed with the crumbled oat milk bread.
  • Finally to finish, place the mixture in a large pudding mold and pour over the contents of the fig jam.
  • Then, place the mold in a bain-marie to cook it for 1 hour (approximately) over medium heat.
  • Once ready, turn off the heat and place the mixture in the refrigerator for 2 hours.
  • Serve and enjoy this delicious low calorie pudding recipe.
